Civil War Foodways Series: The Battle of Appomattox

William Joseph Miller of the 12th South Carolina Regiment was born in 1845 in Yorkville, South Carolina. He enlisted in the confederate army at age fifteen. He provides another rich account of foodways for confederate soldiers on the battle front. Speaking of an episode near Farmville, Virginia shortly before the battle of Appomattox, Miller says we “stopped at a house in the town and the good woman was cooking corn meal cakes on top of the stove for the hungry soldiers, and they would take them off the stove half done and march on eating them.” Generally confederates soldiers survived on rations consisting of bacon and crackers. The remainder of their food they obtained foraging, raiding the domestic animals of nearby farms, and as hand outs from sympathetic southern civilians like the corn meal cake maker in this story. In the fall of the year, union and confederate soldiers could use pumpkin acquired in a multitude of ways to make a meal. Pumpkins are in season and with Halloween around the corner, they are everywhere now. Here are some pumpkin recipes below:
