Part 1 Series on State Sponsored Sustainable Gardening during the FDR Years

During the Depression, many struggling families had to eat almost like vegetarians, surviving on vegetables grown in expanded family gardens. Many turned to the New Deal relief programs started after Franklin D. Roosevelt was elected president in 1932. Over the next several days I will be running a series of blogs on sustainable gardening in connection to a similar series that NPR is running http://www.npr.org/templates/story/story.php?storyId=111519254. The post came from research material I found while working on my book Hog and Hominy: Soul Food from Africa to America http://cup.columbia.edu/book/978-0-231-14638-8/hog-andhominy/excerpt. I will be sharing photos from my own back yard gardening and related recipes. Today’s garden recipe comes from a dish I made this past Sunday on the fly when we had unexpected guest for lunch. I simply call the dish cucumber salad and served it with whole wheat pizza from a local pizza parlor.

Cucumber Salad
2 Large diced cucumbers
2 Large diced tomatoes (or a half a pint of cherry tomatoes sliced into halves)
¼ cup diced fresh parsley
1 table spoon of Adobe seasoning (whatever one you like)
½ cup to a cup of Cuban Style Mojo Sauce & Marinade (I used World Harbors brand)
Directions: add all the ingredients together and toss. Serves 6
