During the Depression families also adapted their cooking to both lean times and the short periods of feasting that followed the arrival of state aid, bartered items, and the harvest from a garden. Singer and song writer Nina Simone recalled that as a child in Tyron, North Carolina, her family transformed a big garden into "a huge garden and finally a little farm. We had . . . Rows and rows of string beans, collard greens, tomatoes, corn and squash."
I planted a variety of squash in my family garden here in the Hudson Valley. These are photos I took of some of the valley’s finest squash early in the morning from a much larger local garden than my own. It’s easy to grow and there are so many dishes you can make from the bounty. Below I provide some great summer squash and zucchini recipes to go with the historical piece. The first one for zucchini muffins is one I really enjoy making and eating.
